Protein: 30 grams for 2 slices

This toast is loaded with protein from the cottage cheese and walnuts, keeping you full and energized. I love how easy it is to prepare in the air fryer, making it a quick option for busy mornings or a nutritious midday snack. The balance of flavors and textures makes it a go-to in my kitchen!

Why you will love this recipe

  • High-protein: Cottage cheese and walnuts provide a protein boost.
  • Quick & easy: Ready in just minutes using an air fryer.
  • Customizable: Swap out toppings for different flavors.
  • Great texture: Crunchy toast, creamy cheese, and juicy fruit.
  • Naturally sweet: Honey and peaches add just the right amount of sweetness.

Key ingredients and substitutions

  • Bread: Use your favorite! I use my bread machine cottage cheese bread for extra protein, but you can try sourdough, whole wheat, an english muffin, or a seeded loaf adds extra fiber. If you want a softer bite, try brioche or white bread.
  • Cottage cheese: Cottage cheese provides protein and a creamy base. If you prefer a smoother texture, blend it in a food processor for whipped cottage cheese.
  • Peach: Fresh or canned peaches work well. Swap for bananas, strawberries, or raspberries for a different twist.
  • Cinnamon: Adds warmth and depth to the flavors. A small sprinkle of nutmeg or cardamom works, too.
  • Walnuts: Walnuts give a crunchy contrast and extra protein. Almonds, pecans, or chia seeds are good alternatives.
  • Honey: Brings natural sweetness. Maple syrup or a drizzle of hot honey can switch things up.

How to make air fryer cottage cheese toast

  1. Spread the cottage cheese: Take your slices of bread and evenly spread 4 tablespoons of cottage cheese on each one. If you prefer it extra smooth, blend it first for whipped cottage cheese.
  2. Add the toppings: Arrange the peach slices over the cheese. Sprinkle a pinch of cinnamon on top, then scatter the walnuts for crunch.
  1. Drizzle with honey: A little honey goes a long way! Drizzle about 2 teaspoons over the toast – feel free to add more to taste.
  1. Air fry to perfection: Place the toast in your air fryer at 200°C/400°F for 7 minutes. No need to preheat! If you’re using an oven, bake at the same temperature until golden and crispy.
  2. Check for doneness: The toast is ready when the edges are golden brown, the cottage cheese is slightly set, and the peaches have caramelized spots.
  3. Finish with more honey: If you like extra sweetness, add another light drizzle before serving.
  4. Enjoy immediately: Best served warm while the toast is crispy and the flavors are fresh!

Recipe notes and tips

  • Best bread: Use a sturdy bread like sourdough or whole grain to hold up the toppings and stay crispy. My bread machine cottage cheese bread is my go-to.
  • Extra crunch: Lightly toast the bread before adding the toppings if you want an extra crispy base.
  • Sweetness level: Adjust the honey based on your preference. Maple syrup or a drizzle of balsamic vinegar can also add a nice touch.
  • Make it creamier: Blend the cottage cheese in a food processor for a smooth, whipped texture.
  • Nutty boost: Swap walnuts for almonds, pecans, or even peanut butter for more protein and healthy fats.
  • Oven method: If you don’t have an air fryer, bake at 200°C/400°F for 7-10 minutes or until golden brown.

Storage instructions

  • Best when fresh: This toast is best enjoyed right away while it’s warm and crispy.
  • Short-term storage: If needed, store leftover toast in an airtight container in the fridge for up to 1 day. The bread will soften, but you can reheat it.
  • Reheating tips: Pop it back in the air fryer at 180°C/350°F for 2-3 minutes or in the oven until warm and crispy again. Avoid the microwave – it’ll make the toast soggy.

Variations

  • Savory: Skip the honey and peaches – top with sliced tomatoes, red onion, and a sprinkle of bagel seasoning for a delicious savory cottage cheese toast.
  • Berry blast: Swap peaches for blueberries, raspberries, or strawberries and add a drizzle of balsamic vinegar for a tangy-sweet combo.
  • Nut butter boost: Spread a thin layer of almond butter or peanut butter under the cottage cheese for extra protein and flavor.
  • Smoked salmon: Add smoked salmon, capers, and fresh dill for a bagel-inspired toast with extra vitamins and healthy fats.
  • Cinnamon banana: Use sliced bananas instead of peaches and sprinkle with cinnamon and chia seeds for fiber and potassium.
  • Hot honey heat: Drizzle hot honey instead of regular honey for a sweet-spicy balance that pairs well with the creamy cottage cheese.
  • Creamy ricotta swap: If you’re out of cottage cheese, ricotta cheese makes a great alternative with a milder flavor but less protein.

What to serve with this recipe

  • Fruits: A side of fresh berries, sliced bananas, or juicy peaches complements the flavors perfectly.
  • Eggs: Pair with a hard-boiled egg, scrambled eggs, or a poached egg for extra protein.
  • Savory sides: Serve with avocado toastsmoked salmon, or a simple tomato salad for a balanced meal.
  • Yogurt & granola: A bowl of Greek yogurt with chia seeds, honey, and a sprinkle of granola makes a great companion.
  • Smoothies: A protein-packed smoothie with banana, almond butter, and chia seeds is a great pairing.
  • Coffee or tea: A warm cup of coffee, matcha, or herbal tea makes this snack even cozier.
