Air Fryer Cottage Cheese Toast Recipe

Cottage cheese on toast is a simple, high-protein snack with the perfect mix of creamy, crunchy, and sweet flavors. This version combines whipped cottage cheese, juicy peaches, warm cinnamon, and a drizzle of honey for a satisfying bite that’s packed with fiber and nutrients.

Ingredients

  • 2 slices bread - I use my bread machine cottage cheese bread
  • 8 tablespoons cottage cheese
  • 1 peach - sliced (or canned peach slices in juice)
  • 1 pinch cinnamon
  • 1 small handful walnuts
  • 2 teaspoons honey - plus more to taste

Instructions

  • Spread cottage cheese over the slices of bread, 4 tablespoons per slice.
    2 slices bread, 8 tablespoons cottage cheese
  • Add the sliced peach followed by the cinnamon and walnuts.
    1 peach, 1 pinch cinnamon, 1 small handful walnuts
  • Drizzle the honey over the slices.
    2 teaspoons honey
  • Air fry at 200°C/400°F for 7 minutes. Note: I use a ninja foodi air fryer and don't preheat it.
  • When the toast is browning and crunchy, and the cheese and peaches have some brown spots, it's ready.
  • Drizzle with a little more honey if desired, and enjoy!

Notes

  • Best bread: Use a sturdy bread like sourdough or whole grain to hold up the toppings and stay crispy.
  • Extra crunch: Lightly toast the bread before adding the toppings if you want an extra crispy base.
  • Sweetness level: Adjust the honey based on your preference. Maple syrup or a drizzle of balsamic vinegar can also add a nice touch.
  • Make it creamier: Blend the cottage cheese in a food processor for a smooth, whipped texture.
  • Nutty boost: Swap walnuts for almonds, pecans, or even peanut butter for more protein and healthy fats.
  • Oven method: If you don’t have an air fryer, bake at 200°C/400°F for 7-10 minutes or until golden brown.
 

Storage Instructions

  • Best when fresh: This toast is best enjoyed right away while it’s warm and crispy.
  • Short-term storage: If needed, store leftover toast in an airtight container in the fridge for up to 1 day. The bread will soften, but you can reheat it.
  • Reheating tips: Pop it back in the air fryer at 180°C/350°F for 2-3 minutes or in the oven until warm and crispy again. Avoid the microwave - it’ll make the toast soggy.
  • Make ahead option: You can prep the toppings separately and assemble fresh for a quick snack. Whipped cottage cheese can be stored in the fridge for up to 3 days.
