High protein pizza pockets built on a seasoned ground chicken shell instead of dough, with pizza sauce, mozzarella, and pepperoni sealed inside. Each one delivers 54g protein and around 550 calories, ready in about 45 minutes. Good for a Friday night when you want pizza and you’re also hitting your protein for the day.

Key Ingredients & Substitutions

  • Ground chicken (93/7): The shell. The 7% fat is what holds it together and keeps it from drying out. 99/1 gets rubbery and cracks. Ground turkey at the same ratio works identically.
  • Parmesan: Binds the shell and adds savoury depth. Grate it fresh if you can, pre-shredded is coated with anti-caking agent and won’t melt as cleanly.
  • Low-moisture mozzarella: The pizza melt. Do not use fresh mozzarella, it waters out during baking and pops the seal open.
  • Pizza sauce: One tablespoon per pocket, no more. Use a thick sauce, not a watery marinara. Any excess and the shell can’t hold it.
  • Pepperoni: Distributes evenly through the pocket. Regular pepperoni quartered works fine, or mini iof you can find it. Turkey pepperoni cuts the fat by about half if you want to run the numbers tighter.
  • Panko, extra parmesan, egg wash: The topping. This is what gives you the golden crust. Regular breadcrumbs go pale and soft, panko is the right call.
  • Salt, garlic powder, Italian seasoning: Shell seasoning. Ground chicken is bland on its own. The 1¼ tsp salt is not negotiable.

How to Make High Protein Pizza Pockets

  1. Mix the shell. Combine ground chicken, parmesan, garlic powder, Italian seasoning, and salt in a bowl. Mix with your hands until evenly combined, about 30 seconds. Overworking makes it tough.
  2. Portion and flatten. Divide into four 8oz portions. Press each on a piece of parchment into a 6-inch circle, roughly ½ inch thick. If the mix is sticky, chill 10-15 minutes before shaping.
  3. Fill one half. Spread 1 tbsp sauce on one half of each circle, leaving a ¾-inch border. Top with 2-3 tbsp mozzarella and 3-4 mini pepperoni. If it looks close to the edge, take some out.
  4. Fold and seal. Use the parchment to lift the empty half up and over the filling. Press the edges together gently, then crimp with a wet fork. Wetting the tines stops the shell sticking to the fork and pulling the seal apart.
  5. Top the pocket. Brush all over with beaten egg, then scatter panko and extra parmesan across the top.
  6. Bake and broil. Bake at 400°F for about 28 minutes, until the internal temperature reads 165°F. Broil 2-3 minutes until the panko is deep golden. Watch it, panko goes from perfect to burnt fast.
  7. Rest before cutting. Let the pockets sit 5 minutes. Cutting straight away releases all the melted cheese onto the tray.

Tips for Getting It Right

The most common failure with these is the seal breaking during the bake, which turns your pocket into an open-faced situation with cheese on the tray.

  • Leave a real ¾-inch border. Filling that touches the edge will find its way out.
  • Wet your fingers or fork. Dryness will lift the shell as you press, breaking your seal before it starts.
  • Chill sticky mix. If the ground chicken is warm and sticky, 15 minutes in the fridge makes shaping much easier.
  • Trust the temp, not the timer. Ovens vary. Check with a probe thermometer at 25 minutes.
  • Broil last, not first. The panko needs the pocket almost done before it goes under the broiler, or the inside won’t cook through.

Variations

  • Buffalo chicken: Swap the pizza sauce for 1 tbsp buffalo sauce and use half mozzarella, half crumbled blue cheese.
  • BBQ chicken: BBQ sauce, cheddar, and a few thin slices of red onion inside.
  • Meat lovers: Add 1 tbsp cooked sausage crumble to the filling alongside the pepperoni.
  • White pizza: Skip the sauce. Mix 1 tbsp ricotta with a pinch of garlic and use that as the base, then mozzarella on top.

What to Serve With It

  • Vegetable: A simple rocket salad with lemon and olive oil cuts the richness.
  • Extra sauce: Warm a small dish of pizza sauce for dipping.
  • Drink: Cold sparkling water with lemon, or a light beer if it’s Friday.

Storage & Reheating

  • Fridge: Airtight container, 3-4 days.
  • Freezer: Cool completely, wrap each pocket individually in parchment then foil, and freeze up to 2 months. No thawing needed.
  • Reheat: Air fryer at 350°F for 8-10 minutes from fridge, 12-14 minutes from frozen. Oven at 375°F works too, 15-20 minutes. Skip the microwave, it makes the shell soggy and the panko loses its crunch.

FAQ

Why did my pocket split open?

Almost always one of two things: too much filling, or dry fingers/fork when crimping. The seal needs a real border and wet fingers/fork to hold through the bake.

Can I make these ahead?

Yes. Assemble the pockets, top with egg wash and panko, and refrigerate up to 24 hours before baking. Add 3-5 minutes to the bake time straight from the fridge.

Are these keto-friendly?

Close, but not quite. The panko adds the carbs. Swap it for crushed pork rinds or almond flour and this becomes a keto pizza pocket at roughly 3g net carbs each.

Can I skip the egg wash?

It’s what glues the panko on and gives you the golden colour, so I wouldn’t. If you’re out of eggs, brush the tops with olive oil instead. You’ll get some colour but less crunch.
