BBQ Chicken Cottage Cheese Bowl Recipe

This BBQ Chicken Cottage Cheese Bowl is a quick, protein-packed meal that’s deliciously satisfying. With tender chicken, creamy cottage cheese, and sweet potato slices, it’s a perfect balance of flavors and textures. Great for busy days or post-workout fuel!

Ingredients

  • 60 g shredded chicken breast - 1/2 cup, I used this instant pot shredded chicken recipe
  • 180 g low-fat cottage cheese - 3/4 cup
  • 184 g sweet potato - sliced, 1 small sweet potato
  • 3 tablespoons BBQ sauce
  • salt and pepper - to taste
  • spray oil

Instructions

Sweet Potato Toast

  • Spray the sliced sweet potato with a little oil and season with salt and pepper.
    184 g sweet potato, spray oil, salt and pepper
  • Pop the slices in a toaster or toaster oven and toast until soft, or air fry them for 10 minutes at 200°C/400°F, flipping half way through.

BBQ Chicken

  • Warm the chicken in the microwave for 30 seconds-1 minute.
    60 g shredded chicken breast
  • Mix the BBQ sauce with the chicken.
    3 tablespoons BBQ sauce

BBQ Chicken Cottage Cheese Bowl

  • Add the cottage cheese to a bowl and season with salt and pepper if desired.
  • Top with BBQ chicken and slide the sweet potato slices into the bowl.
  • Optional: Add a spoonful of cottage cheese to a slice of sweet potato, top with bbq chicken, or cut up the sweet potatoes and mix everything together. Enjoy!

Notes

  • Bowl Options: I used a pasta bowl for this recipe, but a normal cereral bowl would be fine, or even a plate.
  • Sweet Potato Texture: Toast or air fry until soft but not mushy.
  • Chicken Options: Leftover rotisserie chicken works perfectly.
  • Sauce Adjustments: Go for smoky, spicy, or sugar-free BBQ sauce based on your preference.
  • Extra Toppings: Add chopped fresh herbs or a sprinkle of chili flakes for extra flavor.
  • Mix It Up: Cut the sweet potato into cubes for easier mixing in the bowl.

  • Keep It Separate: Store sweet potato slices, chicken, and cottage cheese in separate containers to maintain freshness.
  • Refrigeration: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat Gently: Warm the chicken and sweet potatoes in the microwave or a skillet before assembling.
  • Fresh Assembly: Add the cottage cheese fresh each time for the best texture.
