- 1½ cups Greek yogurt
- 1 tablespoon Dijon mustard
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper - more to taste
- ½ teaspoon salt - more to taste
- 1 lb cooked rotisserie chicken - shredded
- 1 granny Smith apple - diced
- 2 ribs celery - chopped
- 8 leaves romaine lettuce - washed
- 8 small carrots - grated
In a large bowl, mix together the Greek yogurt, Dijon mustard, and seasonings.

Add the chicken, apple, and celery to the bowl and mix well.
1 lb cooked rotisserie chicken, 1 granny Smith apple, 2 ribs celery
Season with salt and pepper to taste if needed, and chill it in the fridge for a couple of hours if you have the time.
Prepare the lettuce wraps by laying 2 lettuce leaves on each plate.
8 leaves romaine lettuce
Top the lettuce leaves with grated carrot and then add the chicken salad on top.
