Ingredients

  • 2 large apples
  • 1 cup cottage cheese - blended smooth
  • 1 large egg
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • pinch salt

Crumble:

  • 3 tablespoons rolled oats
  • 1 tablespoon chopped walnuts
  • 1 tablespoon brown sugar
  • 1 tablespoon butter - melted
  • ½ teaspoon cinnamon

Instructions

  • Preheat oven to 350°F/190°C, and line a baking sheet with parchment paper.
  • Cut each apple in half pole to pole. Scoop out the core and seeds plus a bit of flesh with a spoon, leaving about a ½-inch wall. Finely chop the scooped-out flesh and set aside. Slice a thin sliver off the rounded bottom of each half so it sits flat, cut side up.

  • Blend the cottage cheese until completely smooth, about 60 seconds.

  • Stir in the egg, the reserved chopped apple, brown sugar, cinnamon, vanilla, and salt.

  • Mix the crumble ingredients until loosely clumped.

  • Line a baking dish with parchment. Arrange the apple halves cut side up. Fill generously with the cottage cheese mixture, mounding slightly over the top. Top with the crumble.
  • Bake 20-22 minutes, checking at 18, until the apples are tender but still hold their shape and the crumble is golden. If the cut edges look dry or the crumble is browning too fast, tent with foil.
  • Rest 5 minutes before serving.

Notes

  • Use a firm apple: Honeycrisp or Braeburn, not Red Delicious.
  • Blend cottage cheese at least 60 seconds.
  • Leave a ½-inch wall when scooping. Thinner tears.
  • Watch carefully towards the end. Tent with foil if the crumble browns first.
