Cottage Cheese Caramel Apple Dip

A smooth cinnamon cottage cheese dip layered over homemade date caramel, made for apple slices.

Ingredients

  • 2 cups cottage cheese
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • pinch of salt
  • Apple slices - for serving

Date caramel:

  • 8.5 ounces pitted dates - about 1⅓ cups - you will not need all of this for the dip
  • boiling water - enough to cover the dates. Reserve ⅓ cup after soaking for making the caramel
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Instructions

  • Cover dates with boiling water. Soak 15 to 20 minutes. Drain, reserving ⅓ cup water plus a little extra.

  • Blend dates, ⅓ cup reserved water, salt, and vanilla 2 to 3 minutes until smooth. Thin with extra water if needed. Scrape into a bowl.
    ½ teaspoon vanilla extract, ¼ teaspoon salt
  • In the same processor, blend cottage cheese, 3 tbsp caramel, vanilla, cinnamon, and salt 2 to 3 minutes until no curds remain.
    2 cups cottage cheese, 1 teaspoon vanilla extract, ¼ teaspoon cinnamon, pinch of salt
  • Spread 2 to 3 tbsp caramel in the bottom of a dish. Pour cottage cheese mixture over it.
  • Chill 30 minutes, or serve right away with apple slices.

Notes

  • Blend each layer the full 3 minutes. Curds now means curds later.
  • Food processor, not blender.
  • Dates should squash flat before blending.
  • Pour off cottage cheese liquid first.
